Three decades of research explain why these numbers move โ and why they move this fast.
Arterial inflammation drops rapidly
The endothelial cells lining every artery produce nitric oxide โ the compound that keeps vessel walls smooth and flexible. Dietary fat and animal protein impair nitric oxide production. Remove those inputs and endothelial function begins recovering within days, not months.

LDL falls because its source is removed
Dietary cholesterol and saturated fat are the primary inputs for LDL production. Whole foods contain no dietary cholesterol and minimal saturated fat. The liver adjusts rapidly โ LDL production drops within 24โ48 hours of dietary change, with measurable blood levels reflecting that change within days.

Blood pressure responds to reduced sodium and increased potassium
Whole foods are naturally low in sodium and high in potassium โ the ideal ratio for vascular relaxation. Our 9.4-point average drop in 5โ6 days is consistent with DASH trial evidence and Esselstyn clinical experience.

Blood glucose stabilizes as insulin sensitivity improves
Dietary fat is a primary driver of insulin resistance โ it competes with glucose at the cellular receptor level. Reduce dietary fat, improve insulin sensitivity. Fasting blood glucose responds within the same 5โ9 day window.

Though current medical and surgical treatments manage coronary artery disease, they do little to prevent or stop it. Nutritional intervention, as shown in our study and others, has halted and even reversed Coronary Artery Disease.

reversed heart disease
The most significant body of evidence behind the PlantSTRONG program comes from decades of clinical work by Dr. Caldwell Esselstyn Jr. at the Cleveland Clinic โ beginning in a time when the medical establishment considered coronary artery disease irreversible.
His original 12-year study took patients who had collectively experienced 49 coronary events and placed them on a whole-food protocol. The results were so striking that they were initially met with skepticism. After 12 years, the data was unambiguous.
A second, larger study tracked 198 patients for four years. Among those who maintained the protocol, the cardiac event rate was effectively zero. Among those who reverted to their prior diet: nearly two-thirds suffered another major cardiac event.
This is not lifestyle improvement. This is disease reversal โ documented in peer-reviewed literature, replicated across multiple cohorts, and confirmed in our own independently verified dataset of 918 participants.

In a community pilot conducted with Plant-Based Cleveland, 58 ordinary participants โ teachers, firefighters, lawyers, the mayor and his wife โ followed a whole-food program for 7 days. Biometrics were measured before and after by clinical staff.

My doctor prescribed the Esselstyn eating plan and I found PLANTSTRONG through that. I have some blockage in my coronary artery. I came back the following year because what I learned here changed how I think about every meal.
